I accidentally made three new hot sauces

Hey Friends,

A couple of weeks ago I was asked to speak in the Fermentation Tent at the Vermont Brewfest. I spoke there last year and had a great time, but this year we'd already sold out of our only fermented hot sauce, Rum Barrel Fermented Smoked Jalapeño. I needed something new to bring with me.

I built this one off a one-year ferment that we make for a client. Our Rum Barrel Ferment is fast and lively, but these fermented serranos have a much higher salt content, so they take their time. Garlic scapes and Vermont baby ginger round everything out with a deep umami flavor.

I'm proud to say that Garlic Ginger Fermented Serrano was the bestselling sauce we brought to Vermont Brewfest.

I had never even heard of bread and butter pickles before moving to Vermont, but they're a staple here with a devoted following. We made Bread and Butter Pickle Hot Sauce with pure Vermont maple syrup (obvs) to debut at the Connecticut Pickle Festival later this month.

Bread and butter pickles are sweeter than the giant dill pickles I grew up with and they're fantastic on sandwiches or straight out of the jar. For this sauce, I stepped aside and let two of my native Vermonter coworkers take the reins. They created a hot sauce that tastes just like a Vermont bread and butter pickle.

Finally, there's Sweet Corn Tomato Chipotle Hot Sauce.

This one reminds me of a gourmet ketchup, and I reach for it anywhere I'd normally use ketchup. It's also fantastic mixed into ketchup, aioli, or honey mustard. It has officially earned a permanent spot with the other condiment staples in my refrigerator.
